If you have prepared a cherry jam, some cherries in syrup or a cherry jam and honey, probably, you will have leftover - as waste - the stones.
Two different liqueurs can be prepared with cherry stones, from the classic cherry to digestive liqueur. On this page we will see both recipes.
Warning: cherry pits and cyanide!
Regardless of the recipe you choose, use only intact kernels. Cherry stones contain hydrogen cyanide, its salt (cyanide) is fatal for humans.
Recipe for liqueur with cherry stones: the digestive
Let's start with the most popular recipe, the digestive with cherry stones. You will only need three ingredients:
- 500 ml of pure alcohol at 90 °
- 400 grams of sugar
- 1 kg of cherry stones
The procedure is simple: place the cherry stones in a glass jar, covered with alcohol. Close hermetically and leave to macerate for 30 days.
At the end of the wait, pour everything into a saucepan (with lid) with the addition of sugar. Cook until the mixture comes to a boil, turn off immediately as soon as the first bubbles form. Allow to cool without ever removing the lid of the saucepan.
When the cherry stone liqueur is warm, filter the alcohol so as to eliminate the stones. Transfer to bottles intended for storage. The liqueur should be stored in a cool and dark place.

Cherry stone liqueur: Homemade Cherry
Is calledCherryand it is a very popular liqueur especially by the female public. It has an intense cherry flavor and there are several versions. To give you an idea, there are those who prepare Cherry liqueur starting from:
- pulp of cherries
- cherry stones
- cherry leaves
- food alcohol
- Red wine
In the canonical recipe (which many would call the original recipe) ofHomemade Cherry, we use:
- 400 gr of cherries
- 400 grams of sugar
- 1 liter of alcohol 90 °
The pitted cherries are macerated in alcohol for 30 days and then the mixture is boiled as seen above.
In an older version of thehomemade Cherry recipe, pits can also be used. Here is how to proceed to prepare the recipe for this liqueur with cherry stones or cherry stones.
- 500 ml of red wine
- 300 grams of sugar
- 200 ml of pure alcohol 90 °
- 500 gr of cherry stones
Combine the alcohol with the wine. Macerate the cherry stones in the “wine + alcohol” mixture. Leave to macerate for 20 days. After the maceration period, boil the mixture with the addition of sugar. Again, use a saucepan with a lid and turn off promptly when boiling point is reached.
Let it cool down without removing the lid from the pot. Filter, mix and bottle.
To make the liqueur tastier and with a strong cherry note, you can add a cherry extract created precisely for the preparation of the liqueur.
